Sometimes you just need that go-to oven potato recipe that you can scale up to help feed a crowd. This one is a favorite with kids and husbands alike!
I enjoy my bready-crunchy foods as much as the next American girl with Italian roots, but as we are raising our children in a world with increasing amounts of food sensitivities and gut issues, we tend to lean away from shake and bake type mixes that use flour. So I have developed this one as a gluten free and very simple alternative to that.
Butter or coconut oil can easily be subbed for the bacon grease if you don’t keep a jar of that in your kitchen.
Whole Food Crispy Parmesan Potatoes
1/2 cup bacon grease
3 lbs potatoes
1/4 cup nutritional yeast
1/4 cup parmesan cheese
3/4 tsp salt
1/2 tsp dried parsley (optional)
1/4 tsp pepper

Preheat oven to 375 degrees.
Melt bacon grease or butter in a 9×13 baking pan or 12″ cast iron skillet.
Peel potatoes and cut into 2″ cubes.
Mix up the remaining ingredients and toss your potatoes until well coated in the spice mix. I like to use a big spoon or just my hands.
Carefully transfer the coated potatoes into the hot pan. Beware of the hot grease!
Bake potatoes approximately 60 minutes – flipping them halfway through cook time.
Delicious as a replacement to a bag of chips to accompany your fresh-off-the-grill summertime steak or burgers!
Children enjoy ketchup on these.
